Sunshine & Hawaiian Beef

Sunshine changes so much! I can see the blooms of the fruit trees, the buds of the leaves ready to open, and blue skies after months of grey.

Sunshine 😀.

I don’t know what it is about the sunshine that leaves me feeling hope and optimistic about the future? Nothing changed from last week, maybe I just see things more clearly in the light of the sun? The grass is literally greener.

The vitamin D gives me more energy! Which I need right now because I’m getting older 😆 in fact I am celebrating a birthday at the end of the week! I also need the energy because after a long winter that seemed even longer because of the pandemic, there is all of a sudden a lot to be done! Birthdays, competitive dance rehearsal, dance picture day, summer camp registrations, RWB registration finalization, and a ton of PAC/budgetary advisory meetings! I feel pumped for things to feel somewhat normal again.

Normal. I so badly want to have normalcy again but it also scares the hell out of me. I am an introvert. Most people don’t know that about me because I’m loud and social but that’s how I trick you 😂. Ninja has to talk me in to leaving the house on most occasions and he has gotten pretty good at ignoring my BAD moods when faced with a social event LOL however it doesn’t change the anxiety I have just thinking about resuming social life.

It’s such a contradictory feeling! I cannot wait to hug my friends! I am so excited to host a dinner party! I feel so much joy at the thought of having my loved ones see our new home! I also got a little bit nauseous just typing those things 🤣. I know that once it is safe to do so I will shake off my insecurities and get back out there but right now I am feeling a sense of loss. At this moment in time everything is under my control because it is under my roof. I had this exact same feeling at this time last year, Ninja went back to work the first week of May and I remember feeling the grief of losing our little bubble. Those first few weeks of the pandemic, while unknown and scary, were also some of the best weeks of my life. I was in the honeymoon phase of the pandemic. As we get closer and closer to leaving our bubble I feel sad. I’m not really sure how to explain it… It just is.

I have been feeling like this for a while but have been able to understand it so much more now that I can see clearly, in the sunshine. I am confident that as the days get longer and the sun burns brighter that I will be able to understand all the feelings that I am feeling and take steps towards the future one foot in front of the other 💛.

I wanted to share this yummy dish that I have been saving for a sunny day! This is an easy dish that is tasty, uses just 1 pot and uses stuff you probably already have in your pantry! The only thing I had to buy was the pineapple! All of us enjoyed this meal immensely and I can't wait to make it again soon!

Hawaiian Beef
Adapted from Cooking Made Healthy

1 pound ground beef
1 onion, chopped
1/2 bell pepper, chopped finely (I used orange)
2 garlic cloves, minced
2 tablespoons, ketchup
2 tablespoons brown sugar
2 tablespoons rice vinegar
2 tablespoons soy sauce
1/2 cup pineapple juice
1 can pineapple chunks
1/2 bell pepper cut into chunks (I used red)
1/2 bell pepper cut into chunks 
(I used the rest of the orange)

Add the beef, onions, finely chopped bell pepper and garlic to a dutch oven and cook until the beef is cooked through and the onions are softened.

Add the ketchup, brown sugar, rice vinegar, soy sauce and pineapple juice and cook for 3-4 minutes then add in the pineapple chunks and bell peppers mix well and cook for an additional 3-4 minutes to soften the bell peppers.

What a week! I did 103 000 steps during my busy week week! The Girls had busy weeks at school, I had a budget advisory meeting, we ate, we drank, and we watched The Masters. This weekend SBean also had an outdoor playdate! She was so excited all week, she barely slept! HBear also got out and went for Bubble Tea with her BCBesty and for a walk to Starbucks with her "boyfriend". Oh to be 12 again! 😂. These kids are SO done with this pandemic, it was so nice to see them so happy 💛.
