Vegetables are a must on a diet. I suggest carrot cake,

my rant the other day? LOL
Well
I wanted you to know that there are so many bouquets in my life, not just beefs
J
HBear
amazes me sometimes all the time.
The other night we were in the bath and she said “Mommy
why are Grandma and Grandpa visiting my cousins right now?”
BIG
sigh…
“Well
Honey Aaron is very sick.”
“He
has cancer like Nana.”
“Yes.
Do you remember when Nana was in the place we called hospice? Well, Aaron is
kind of like that now.”
Quiet.
“Is
he going to die?”
BIGGER
sigh…
“Sadly
yes my Love.”
“Well!
That is just so sad! He is not going to get to be a grown up!”
That
is my girl. She is a thinker. She understands that Aaron will not have a future
It is so heartbreaking but she is so sensitive.
“Well
Mommy I am going to have a talk with Nana and I am going to tell her to be his
friend. Is that ok?”
“Sure
is HBear.” J
In
such a sad time, she really does light up my life!
On
the other hand… last week her teacher was coming back from a 2 week leave. On
Sunday I said “Big day tomorrow HBear! Guess who is coming back?”
She
automatically said “NANA!?
I
fought back the tears and explained again. She nodded and said OK but the excitement
of having her teacher back was lost in the moment… I guess that’s not the best
bouquet story, hey? LOL But the point is, she makes me smile. Even when it is a
sad observation, she amazes me J
On
that note, SBean is just becoming such a… person! LOL she certainly has a
personality! She loves going to the library, where she has taught herself to
climb up onto chairs! LOL
This
morning we had MORE snow! I am certainly not complaining as we have barely had
any snow this year and it is great for our snow clearing business J. So Ninja and Dad are
out of the house by 4:30am and don’t usually get home until after 9… this
morning at about 8:15 I was throwing in a load of laundry and I heard her
screaming “DADDY DADDY DAAAADDDDDYYYYY!” I ran into the livingroom and said “No
Bean Daddy is at work” just as I saw Ninja’s head bob by the front window LOL,
she saw him and there was no quieting her excitement LOL! Funny because the
other day at gymnastics we were having a snack with a friend and Ninja walked
in. SBean stopped eating looked up and said “Hi Daddy!” and then went back to
her banana. LOL everyone was shocked! She is a smartypants J
I
thought it was pretty awesome that they Russians made fun of the unopened
snowflake from the opening ceremonies, in the closing ceremonies. I think that
was the highlight of the entire 4 hours of MORE “modern” Russia dancing ballet,
playing Tychowski’s music and depicting activities that happed over a century
ago… whatever. LOL
HOWEVER….
Yeah Team Canada! I think our athletes, our heartwarming stories and our
patient but deadly hockey teams did us proud! I Love Canada!

My
In-Laws are back from their visit in Edmonton. They came over for dinner yesterday J I made Thai Turkey Burgers with Slaw, Macaroni Salad and Roasted Baby Potatoes with Honey Scallion Sauce, Hello Yummy!
So,
I made these burgers… last year around this time LOL and I have been craving
them! They are soooo good! I also had baby potatoes, so I roasted them in a little olive oil and salt and then tossed them in the sauce, (I have made the sauce before) and topped with bacon J
My
Mom used to make the BEST macaroni salad… using KD! It is so easy it should be
illegal. I don’t know why but no matter how many times I have tried to make homemade mac
& cheese it never tastes as good as KD?!?! I have even tried Annie’s, yeah
not as good. The girls LOVE it too. This is Mom’s recipe with a little change…
I hate celery so I add broccoli instead J
Easy Peasy Mac and
Cheesy Salad
2
boxes Macaroni & Cheese Dinner
1
cup mayo
½
cup milk
½ cup broccoli, cut into small florets
½ red pepper, chopped
1
½ teaspoons of paprika
4 hard-cooked eggs,
chopped
6 green
onions, sliced
Make
mac and cheese. I boil my pasta for 6 minutes. You do not want it mushy!
Add remaining
ingredients; mix lightly. Season with salt and pepper.
It
is THAT easy J
OK
so here’s the problem… I CANNOT make a hard boiled freaking egg if my life
depended on it! WTF? Seriously. I fear I will never have an egg salad sandwich
again L Another thing I let my
Mommy do fooooor me. Yes I am whining. I boiled 4 eggs for 1 minute. Simmered for
1 minute and took off heat and covered for 12 minutes. Rinsed in cold water and
presto… a soft boiled egg!
So
I put the 3 remaining eggs back in and repeated the process. Presto a soft
boiled egg!
So
I did it for a 3rd time!!! Still mushy yolk and inside white!!!!!
Holy cow! I kick myself off MasterChef. No No I evict myself from the house,
better yet, I vote myself out of the the kitchen!
So
my salad just didn’t have what I wanted… obviously I wanted hard boiled eggs! I
have 1 left I refuse to open… It is so frustrating to go through the whole
peeling process (it takes me FOREVER to peel a hard soft boiled egg) just to see a
runny yolk. Bah!
For dessert I made carrot cake cookies. I am
trying to be sneaky like lol. Seriously, SBean doesn’t eat veggies. To be
honest, right now SBean doesn’t eat anything L I know those back teeth
are trying to pop through but man, my girl is not having a good time with it.
This morning I made homemade oatmeal with a little chocolate flavored honey hee
hee, she finally ate a whole bowl! I feel even though I sweetened it up, I was
successful!
Carrot Cake Cookies

1/2
cup coconut oil
1/2 cup brown sugar, firmly packed
1/4 cup granulated sugar
1 egg yolk
3/4 cup flour
1/2 teaspoon ground ginger
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup oats
3/4 cup carrots, peeled and grated
1/2 cup raisins
1/2 cup brown sugar, firmly packed
1/4 cup granulated sugar
1 egg yolk
3/4 cup flour
1/2 teaspoon ground ginger
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup oats
3/4 cup carrots, peeled and grated
1/2 cup raisins
Preheat
your oven to 350 degrees and line a cookie sheet with parchment paper.
beat
together your coconut oil, both the brown, white sugar and egg yolk until it is
creamy.
Add
the ginger, cinnamon and salt and beat until combined.
Gradually
add in the flour, beating between each addition, and then stir in the oats,
carrots, and raisins.
Scoop
dough by tablespoons and round into balls, dropping 2 inches apart onto your cookie
sheets. Flatten them with the palm of your hand.
Bake
for 8 minutes, and then rotate the pans and bake for an additional 10 minutes. Until
the edges are golden and crisp.
