Belgian Waffles

10 Things I have learned while HBear was away for a week with my Dad, visiting my Sis, BIL and SweetPea:

1. SBean isn't as loud as I thought she was. 

SBean + HBear = Screaming "look at me" "HERE I AM!" always on at top speed/volume/energy 
                                           = Loud SBean. 

Mommy & Daddy + SBean = Relatively quiet SBean. I mean she has a loud voice like me, my Mom my Uncle R, my Poppy... she comes by it honestly :) 

2. I had forgotten how easy just 1 is!!!!! Granted, when I had just 1 I didn't feel it was that easy LOL but now I know better and I felt like I was on a freaking holiday for the past week! :)

Without having to get HBear to school and activities while keeping her entertained and constantly fed in between (and remember this is the girl that thinks Sid the Science Kid is her secret crush, she questions everything!!!!!)... All while getting SBean to her activity and keeping her constantly fed with entirely different snacks AND entertained on an entirely different level before she entertains herself and tries to hang from the "chandelier" off the loft bed,

I could just enjoy hanging out with SBean. 

3. When HBear was little, after breakfast we would curl up and cuddle. I have never been able to do this with SBean because we always have to get up and get HBear to school. This week we cuddled in bed every morning, I had forgotten how much I love those morning snuggles.  As we laid there and "comfy wumfy cozy wozy" as she says lol and cuddled and gave kisses each morning, I tried to ingrain it into my memory. These quiet times are so precious and I want to remember all these details, just as I do with HBear. People say they grow up so fast, this is what they mean.

4.  Cooking for 2 and a toddler that doesn't eat dinner is very difficult. 

I remember cooking for Ninja and I before we had kids but I also remember eating a lot of Boston Pizza and a lot of dinners out LOL. 

All our meat is packaged in 3-4 and I don't like buying a lot of produce because it's too much for just the 3 of us. We ended up eating take out 1 night, pizza, spaghetti, waffles, steak and going to my inlaws 1 night. 


5.  We still have it! That's right Ninja and I had dinner at 9 o'clock on Friday night! We had a beer before dinner, we had wine with dinner, we sat in the living room and relaxed and watched the hockey game. We didn't clean up right away. We didn't do baths and then go to separate rooms to work/watch TV. We ate, talked, and had an after dinner Baileys then I did yoga and took a late night shower... because we still have it! :)

6. On that exact same note if you want to "have it" all the time,

don't have 2 kids. 

I love my life. I love the fact that I am reassured that if anything ever happened to me HBear would still have SBean  and SBean  would always have HBear. I love watching them interact and show love for each other. If there was an x-ray grinch thingy you would be able to see my heart grow just a little bit each time I see them play together or sing together, or read to each other... the happiness when HBear came through the door and SBean yelled "ROWEY!".

For some people this isn't their life and there's no right or wrong way it's just who each person is. I feel like we make people in society feel like they should have a certain amount of kids or any kids at all. I know that I have done this in the past because I can't imagine my life without my kids... just as some people can't imagine their life with kids. People that choose to only have 1 child or people that choose to have no children should feel accepted and should not have to defend their decision. 

Unless you are my sister 

Long story short... 2 kids ≠ time to "have it" :) 

7. 1 more child and 1 more adult makes SO many more dishes and laundry! 

Usually I do 2 loads at least every 2 days and we run the dishwasher every second day. I did a load last Sunday and 1 yesterday :) I only ran the dishwasher twice too, all week! Huh!

I only had to vacuum once! Wtf??? 10 minutes after they got home I looked around and realized I needed to vacuum already!!!! Lol 

8. Tomorrow is back to school and activities. Having 2 weeks off from activities was a holiday in itself lol. This week is going to be a hard hitting reality with PAC meetings, winter game meetings, SBean's new gymnastics class, HBear is still in jazz, Broadway, Sparks, guitar and gymnastics starts up again this week too. 

Bring it on! LOL

9. I have the most romantic thoughtful husband EVER. I hate to brag but on Friday I received this in the mail,

Ninja has always done romantic things for me, one day I will just have a post about all the amazing dates, events, birthdays and OMG our engagement story that could end friendships lol seriously, when we first got engaged and I would tell people our story I saw the way ladies glared at me... I find that I end up downplaying these amazing events to make other people feel ok but one day I just need to just have a gush lol. 

10. I missed HBear so much my arms felt twitchy to hug her. But, I did it! I went the longest I have ever been without my baby. The worrying before hand was probably the hardest lol I'm so happy that I didn't allow my fears to keep her from such a wonderful opportunity. I am so thankful to my sis, my BIL, my SweetPea and my Dad for giving her the best spring break possible. Thank you :)

HBear isn't a big fan of waffles so while she was gone we had waffles with whipped cream and strawberries!

Homemade Belgium Waffles
Adapted from In Jennie’s Kitchen
Makes 5 to 6

1 3/4 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1 3/4 cups milk
2 large eggs
1/2 cup melted butter
1 teaspoon vanilla extract
½ teaspoon cinnamon
¼ teaspoon nutmeg
2 tablespoons brown sugar

Whisk the flour, baking powder, cinnamon, nutmeg, brown sugar and salt together in a medium bowl. In another bowl, beat the milk, eggs, melted butter and vanilla extract. Pour the milk mixture over the dry mixture and stir with a fork until just combined. Let sit five minutes.

Begin heating your waffle iron.

Pour batter to cover about 2/3 of the surface. Most waffle irons have a light that goes on or off, signaling the waffles are ready. Another sign of doneness is once you see all the steam has stopped shooting out.

Top with whipped cream, fruit and maple syrup :)
