One Pot Bacon Cheeseburger Pasta with Mushrooms

Don't you hate it when you have something at the front of your mind that needs to be done and you forget. 

For example, every night when I get into bed I look up at my ceiling fan and I see it coated with dust and I'm totally disgusted by it. 


I always forget to clean it and then when it's 11 o'clock at night I don't want to put down towels to collect all the dust that falls from the ceiling fan. Even when I use a wet cloth this still happens. And right now it's 4:30 in the afternoon I could go do it right now, I obviously just remembered, but I cleaned the sheets today and the bedding.

So now my ceiling fan which hangs over my bed is all dirty and I can't clean it because my bedding is all clean. LOL 

Well, oddly enough my story has to do with forgetting and cleaning my sheets so here we go...

when I clean my sheets I like to shave. I like to get all nice and shaved and creamed. I might even file my feet down. That sounds grosser than it really is :) but the point is, is that I like to feel nice when I get into clean sheets, I even put on new pajamas LOL. So, today I thought it had been a while since I've worn a swimming suit which means it's been a while since I have trimmed, you know, down there :) so I thought I should go do that BAM then it occurred to me I did not buy new scissors yet.  The scissors that I have I used to keep in the shower and they're all rusty and horrible, oh well I'm a trooper, I'll use them anyways :) so because I shower/bath with HBear every night, I never do that in the shower anymore so I turned on Toopy & Binoo and I hid in the bathroom to do some maintenance. Honestly, every time I turn on Toopy & Binoo the kids stay there. Why don't they stay there this time??? Oh riiiiiight because I'm in the bathroom. It's like a magnet for my children to come to the door when I'm in the bathroom it's not just urban myth this is the truth people! 

So, just as I am trimming SBean, who has learned to open doors by herself this week, slams open the door on me in our small ensuite and hits me and of course I clip myself and there's blood everywhere and it hurts, believe me it hurts! Now I'm thinking OMG my Rustyville scissors have hacked up my va-jay-jay and I need to go into the doctors for a tetanus... how am I going to explain this?

So I wadded up some toilet paper pressed it on there and thought now I'm good :) so in a couple days if it all starts swelling and turning green or something I'll go in but until then I am not going to relay this story to my Dr. LOL apparently just to you folks!! LOL

It's weird how some things are just soooo embarrassing lol Like 1 time when I was pregnant with SBean I went in to get sugared. A full Brazilian sugaring. It was the most painful experience aside from actual birth lol. She spent over an hour down there under a lamp. Humiliating. She even turned me over and scissored my legs. OMG I am burning up thinking about it LOL. The WORST part was a few months later. I was out with SBean and I was talking to this lady in line at Walmart. We got everyone all talking and laughing and then I looked at her and said "Do I know you? You look so familiar." She said "nope don't think so" but I could see it all over her face, why would she- OMG! Yup it was the SugarLady! Small town living isn't always what it's cracked up to be lol!!!

And as a good mother should I will take the embarrassment off of me and turn it directly onto HBear lol she has been complaining of a sore tummy lately and yesterday she came home from school and said "Mommy I haven't a sore tummy" and I said "have you tried to go the bathroom" and she said "no but I went at school" that's how I know that her stomach is hurting because she went at school!? That's great for her! I'm very proud of her I don't even think I went pee at school until University LOL Anyways, I say "okay well when you went to the bathroom today was it small and round?" you know I'm trying to fish for whether or not she's constipated lol and she said "No Mommy it was big like this" she made a fist "and it was all big and pointy... OH Mommy! It looked like a Mapleleaf!" LOL what a cutie. 

Okay that's it that's all graphic content LOL so this past weekend we did more Geocaching! we are becoming regular pros (not at all we actually don't find a few of them) some are really hard, some of them are really easy. The whole family loves it though we get to treasure hunt all day :) we don't spend any money, we get a lot of exercise and we have a lot of fun!



















The other night we tried a really easy 1 pot pasta dish. This actually tastes like a cheeseburger!!! Easy, quick AND yummy.

One Pot Bacon Cheeseburger Casserole

Adapted from Closet Cooking

4 strips bacon, cut into 1 inch pieces
1 1/2 pound ground beef
1 onion, diced
1 cup mushrooms, sliced
1 (18 ounce) can diced tomatoes
1 (28-ounce) can tomato sauce
1 cup beef broth
1/4 cup ketchup
1 teaspoon hot sauce (optional)
1 tablespoon yellow mustard
1 teaspoon Montreal steak spice
1 teaspoon Worcestershire sauce
8 ounces pasta
1 cup cheese, shredded


Cook the bacon in a pan over medium heat, about 5-7 minutes, set aside on paper towels to drain and drain the grease from the pan.

Cook the ground beef and onion in the same pan over medium-high heat, about 5-7 minutes, and drain any excess grease.


Add the diced tomatoes, tomato sauce, broth, ketchup, mustard, Worcestershire sauce and pasta, 



bring to a boil, reduce the heat and simmer covered until the pasta is al dente tender, about 15 minutes.


Season with salt and pepper to taste, sprinkle on the cheese and simmer, covered until the cheese has melted, about 2-3 minutes, and serve garnished with the bacon.

Garnish with any of: fresh diced tomato, shredded lettuce, diced pickles, sliced green onions, or your favorite burger toppings.
