Vegetable Ramen Noodle Stir Fry

So as you probably guessed I use this blog as a sort of memory book LOL or perhaps smile box :) 

Anyways, it's my way of remembering all the happy times :), and one of those happy memories will definitely be August long weekend 2014. Having so many family members here was perfect! The only thing that would've made it better is having my SIL Viv and my BIL Kevin and his family here too... Oh and it goes without saying, I wish my Mom was here as well.

So here are a jumbled amount of pictures from our nice family visit :) as my BIL said it was a power visit lol but here's the thing, we live in a resort community with lots of stuff happening in the summer. I emailed everybody and asked what they would all like to do and try to fulfill most of if not all their wishes. Especially my brother who rarely ever visits during the summer due to his line of work. He's a painter so obviously the majority of the jobs come in over the summer. 

So our weekend on steroids had a lot of things happening lol on Saturday my Dad and his three sons went golfing :) then we met up at the market for a little bit a lunch and then we went wine tasting! It was great because Ninja drove one van and I drove the other so no drinking and driving! All the kids stayed with us while all the adults went in for tasting :) what was especially nice is we went on a little tour of the area we've never been to before and did the OK Falls loop.  The scenery was impressive and apparently the whites were fantastic too not many reds though.

After wine tasting we went to my in-laws for a delicious barbecued roast dinner and an evening swim...  Can't get much better than that. 

Oh wait... you can! How about a day at the beach with the whole family! Bocce balls, swimming, the park, and a delicious picnic lunch! It reminded me of my childhood and it was a wonderful day and weekend :)

For dinner the other night I was craving something that is bad. I mean really bad. Ramen noodles. Baaaaaad. So I took out the packets and made the sauce and pretended that the yummy noodles I and the girls were shoveling in our mouths was super healthy :)

Vegetable Ramen Noodle Stir Fry
Adapted from Soup Addict

1 tablespoon rice vinegar
1 tablespoon sesame oil
2 tablespoons soy sauce
2 teaspoons hoisin sauce
1 teaspoon brown sugar
1 clove garlic, minced
1 teaspoon ginger, minced

stir fry:
3 packs ramen noodles, discard the flavor packet
1 tablespoon peanut oil 
2 cloves garlic, minced
1 teaspoon ginger, minced
4 ounces shiitake mushrooms, sliced
1 small head of broccoli, cut into florets 
1 carrot, peeled and sliced thinly 
1/2 red bell pepper, sliced 
2 eggs, lightly scrambled 
4 chives, sliced
1/4 cup cilantro, minced

Whisk the sauce ingredients together in a bowl and set aside.

Bring a medium pot of water to boil over high heat, and cook the noodles according to package directions. I always do 3 minutes, it just works :)

Heat the oil in a large skillet over medium-high heat until shimmering. Add the garlic, ginger, mushrooms, broccoli, and peppers, and saute for about a minute.

Add the scrambled egg and stir until it's mostly set up. Mix in with the vegetables.
Add the noodles.

Drizzle the sauce over the stir fry, plus a big pinch of cilantro, and mix well.

Garnish with scallions and more cilantro before serving.

I totally forgot the cilantro!!!! Seriously? Yeah, so this was good but the cilantro would have made it great, and maybe a few cashews and peas. Yes it needs 1/2 cup of frozen peas. It kinda tasted like fried rice so you need peas :)
