Sleep training. WTF? SydneyBean has given a whole new meaning to the term. Yesterday I took her to the Dr. for her 4 month checkup. My Dr. thought it was funny that she was so strong willed… I am not sure where he came across this information it could have been the “yeah you try to measure my beaner” look she tossed at him when he got that measuring tape out… or maybe it was the new grey hairs that adorn my messy bedhead.

He asked how she was sleeping. I couldn’t lie. I said fine as long as she is right beside me, holding my shirt in one hand and my face in the other. I got THE look. You know, the one that says “oh you are one of THOSE parents”

No I am not. At least I wasn’t with the first. HoneyBear NEVER came into our bed. She still doesn’t. We have always been firm about that.

BUT… when I just had 1 I could sleep during the day if I didn’t get sleep that night.  HoneyBear had her own room, she didn’t have a big sister to keep up all night. We didn’t live with my parents when HoneyBear was this age. We didn’t feel the pressure of keeping her quiet like we do now. Not that my parents pressure us, but, we feel the guilt. They shouldn’t have to listen to a screaming baby 24/7. Dad works from home he needs quiet, Ninja works hard and needs sleep … this IS our livelihood.  So we hold her… all the time.

When my Nana died a few weeks ago we did whatever was needed to keep her happy for the 2 weeks we had family here. Now… we can’t put her down.

I am not even sure if she is old enough to understand if she cries we pick her up. When we put her in the bassinette she looks terrified! I change her, feed her, sing to her and put her down while she sleeps and on the way down she pops open those eyes and that mouth opens and she WAILS.

Today I put her down at 9:45am I checked on her every 10-20 minutes, reassuring her and sitting beside her. By noon I picked her up and changed her and fed her and tried again. By 2:15 I was sitting on the bed letting her silently know that she was ok, that I was there for her. I finally picked her up. I felt the defeat wash over me mixed with sweet relief.

And the little shit actually giggled. When I looked at her she actually raspberried me!

I am gearing up for a long night….


“Lasagna” Chicken Rollups
Adapted from One Organic Mama

4 boneless skinless chicken breasts
½ cup of ricotta cheese
2 tablespoons of Parmesan cheese
A handful of fresh spinach
1 roma tomatoes sliced thinly
8-12 slices of mozzarella
½ cup of plain panko bread crumbs
1 egg.
Salt and Pepper
Fresh basil

Preheat oven to 400.

Pound each chicken breast out so they are thin.

Mix Parmesan and ricotta cheese.

On each breast… spread on a heaping teaspoon of ricotta mixture, put on 2-3 pieces of mozzarella, and a sprinkle of basil, salt and pepper. Put on a couple of pieces of tomato and heap a handful of spinach.


Roll the whole thing and secure with toothpicks.



Mix panko with a bit of Parmesan and some dried basil. Put into a pie plate.

Dredge rolled chicken in egg.

Roll in panko mix.

Put in a baking dish greased with olive oil.


Drizzle each roll up with a bit of olive oil as well. 

Bake until done.  It took me about 50 minutes.



Bubbly Nature Creations
Smashed Potatoes with Thyme, Salt and Vinegar

9 small potatoes
Olive Oil
Salt and Pepper
Fresh Thyme
Vinegar

Boil a pot of salted water. Boil washed potatoes until fork tender. Drain.

Put each potato on an oiled baking sheet and smash gently with a potato masher.

Top each one with salt, pepper and thyme. Drizzle a good amount of olive oil over them to finish.

Put in oven for 45 minutes or until crispy.

Brush on vinegar and season to taste.
  


AMAZEBALLS! This is an awesome dinner! The potatoes are like crunchy delicious salt and vinegar chips J The chicken isn’t heavy and tastes great. Everyone ranted about this one! It is a definite make again recipe!

On a pleasant side note my good friend owns a little crocheting business in Winnipeg. She is WICKED good at her craft! She has made me a few things for the girls…

Today we received a package in the mail and she sent my Mom a few awesome hats for her bald head (it IS beginning to grow back but slowly) PLUS a few surprises for the girls!!!!!

HoneyBear flipped up the front but it still looks AWESOME!
